At Iluminar Coffee, we are proud to offer our customers a taste of Ethiopia with our latest offering, the Guji.
Located in the East Guji Zone of Ethiopia, this coffee is grown across a large farm and multiple small outgrowers, at elevations of 2,000-2,150masl. The Guji region is known for producing coffee with unique and distinctive characters that set it apart from its Yirgacheffe and Sidamo neighbors. The landscape is semi-forest, and the coffee trees benefit from the natural canopy and the decomposing foliage debris. The variety of microclimates within Guji alone encourages the development of diverse flavor profiles that present beautifully as both filter and espresso coffee.
At the Allona Washing Station, the cherries are de-pulped and washed on the same day and carefully monitored and sorted throughout the drying stage to ensure uniform drying. The attentiveness of the women involved in processing procedures ensures the coffee scores highly at the Allona Washing Station.
Made from Natural Heirloom Varietals, 74110 and 74112, this light-bodied coffee has a medium acidity and is bursting with flavors of Blueberry, Cane Sugar, Rose, Lemon, and Peach.
Brewed on pour over, it showcases its unique and distinct flavor profile. The pour over method brings out the natural sweetness and fruity notes of blueberry, cane sugar, rose, lemon, and peach. The light body and medium acidity create a bright, smooth and well-balanced cup, highlighting the careful attention and processing methods used to produce this coffee. With a slow and controlled pour, the pour over method allows for a full extraction of the coffee, bringing out the full complexity of its flavors and aromas.
